Chicken Ramen Noodle Soup

Prep Time: 15 mins

Cook Time: 25-30 mins

Yields: 4

Ingredients
peanut oil - 2 tablespoons
medium yellow onion - 1, finely chopped
celery - 2 stalks, diced
medium sized carrots - 2. diced
garlic - 2 cloves, minced
low-sodium chicken broth - 5 cups
soy sauce - 3 tablespoons
mirin sauce - 1 tablespoon
lime juice - 2 teaspoons or to taste
Sriracha - 2 teaspooons
sesame oil - 1 teaspoon
white pepper - to taste
salt - to taste
dried Ramen noodles - 2 packs
cilantro - 1/4 cup, chopped
Chicken sausages - 2, cooked and sliced
medium-boiled eggs - 4
green onion - 1/4 cup, thinly sliced

Instructions:
1.In a heavy bottom saucepan, heat the peanut oil over medium heat. Add the onion, carrots and celery, sauté until tender.
2.Add garlic and cook for 1 more minute. Then pour the broth into the saucepan and place over medium-high heat.
3.Bring to a boil and lower heat to simmer for another 10 minutes.
4. Add the Ramen noodles and sausages, simmer for about 4-5 minutes. Season with salt and white pepper.
5.Add chopped cilantro and remove from the heat. Serve hot garnish with egg halves and green onion.
